Fried Tilapia and fresh chopped salad

This is my first entry in my new blog. I am so bummed that I didn't take photos as I was cooking... It hadn't yet occurred to me that I would be starting a blog today :)

Last night's dinner was pretty special. I improvised the whole thing based on what I had in the fridge/ freezer that I wanted to use up before it went bad.

It was kind of a chilly day so I started with a very simple soup. Chicken broth, fresh lime, fresh cilantro (leaves and stems) and green onions. My son Wesley is 11 months old and he ate it up; this surprised me because it was his first time with soup. I am even quite sure that more made it to his tummy than down his shirt!

Next I created a chopped salad using grape tomatoes, sweet corn, red onion, jalapeƱo, cilantro and carrots that I had shredded and then diced (they were there for color and vitamins- in this form they lent absolutely no extra flavor). I dressed the salad with salt and the juice of an entire lime.

Next I had some frozen tilapia filets to use up. After thawing them, I cut each filet into four chunks. I deep fried some of them as is and I breaded and fried some of them. I made the breading out of equal parts all-purpose gluten free flour and corn starch, and then a few shakes of seasoned salt. I served the fish with lemon wedges.

And last, for some starch and crunch, I made some homemade corn tortilla chips. Quite simply, slice several small corn tortillas into quarters and then fry them in enough oil so that they are covered during the cooking process. I didn't add any extra seasoning to them because the rest of the meal already had a substantial amount of salt so they actually added a nice balance to the complete dish!
